The main purposes of using malt auxiliary materials are as follows.
① In order to reach a certain solubility and form a large number of enzymes, barley needs to be processed into malt. This malting process not only increases the cost per unit of raw material, but also causes a certain "loss of malting" and reduces the extractable matter of malt. Therefore, it is not economical to produce beer from whole malt. Relatively speaking, the price of auxiliary materials is generally relatively low, and the content of extract is relatively high. Using a certain proportion of auxiliary materials can reduce the production cost.
(2) adding auxiliary materials can adjust the proportion of nitrogen compounds such as anthocyanins in wort, to a certain extent, which is beneficial to the foam performance of beer and prolonging the shelf life of beer.
③ The flavor characteristics of beer can be improved by adding appropriate auxiliary materials and using appropriate proportion.
④ Using sugar or syrup as auxiliary materials can improve the utilization rate of equipment (save the capacity of saccharification equipment), adjust the proportion of sugar and non sugar components in wort, reduce beer color and improve beer fermentation degree.
