How to check the quality of dry malt from the appearance?
① Check the degree of moisture and wheat root wilt. Take a little malt from the four corners and the middle of the drying oven, mix it with a little cooling, and rub a little of it in the palm. The wheat roots should be cleaned, without residual roots and moldy grains.
② The degree of endosperm dissolution and powdery granules were examined. Take dozens of malts and bite them one by one with your teeth. If you feel loose after biting, it should be powdery rather than glassy. If you grind the endosperm with your fingers, you may have fine powder and greasy feeling, but you should not grind hard grains. Take any 100 malts and put them in 30 ℃ water for 10 minutes. Count the number of grains floating on the water, which should account for more than 75% of the total number of grains.
③ Take a number of root removed malts. The color of the malts should be light yellow, glossy, no mildew, no peculiar smell, and have malt flavor.
