What characteristics does the leaching rate of dry malt reflect? What are the reasons for the low leaching rate?
Dry malt leaching rate refers to the ratio of dry matter extracted from malt and dissolved in water to dry matter of malt. The higher the leaching rate, the higher the yield.
The malt leaching rate is generally determined by "standard agreement saccharification method", which includes the soluble substances of malt itself and the soluble substances formed by enzyme during saccharification. Therefore, the malt leaching rate reflects the degree of malt dissolution and the amount of enzyme formed in the process of barley malting, and also reflects the characteristics of the loss of dry matter of barley grains after malting.
The reasons for the low leaching rate are as follows.
① The quality of raw barley has a great influence on the leaching rate, including low content of extract (low 1000 grain weight), high content of protein and low germination rate.
② The main factors affecting malt solubility and leaching rate are process methods and conditions, equipment performance and improper operation. It is necessary to control each production process, adopt different production processes and strict operation modes for different kinds of raw materials, and equip good production equipment.
③ After drying, the enzyme activity of dry malt which has not been stored has not been recovered, the endosperm tissue is not loose enough, and the leaching rate will be lower, but the leaching rate will be increased after a certain period of storage.
④ Although the loss of malt with high malting loss is not the same as that of over dissolved malt extract, the loss of malt with high malting loss is also due to the large amount of malt per unit mass, which leads to the low leaching rate.
