What is saccharification? What is the purpose of saccharification?
The so-called saccharification refers to the gradual decomposition of insoluble high molecular substances in raw and auxiliary materials into soluble low molecular substances under appropriate conditions (temperature, pH and time) by using various enzymes (or additional enzyme preparations) contained in malt after the mash of malt and auxiliary materials is mixed with water. This decomposition process is called saccharification. For malt, this process is actually carried out at the time of malting, and the decomposition continues at the time of saccharification.
In fact, the concept of saccharification mentioned above is in a narrow sense, which is a process of wort preparation. In actual production, Chinese brewers used to call the whole process of wort preparation saccharification, which is a broad concept.
The substance dissolved from malt and excipients is called extract. The unfiltered solution made by saccharification is called saccharification mash, and the filtered clarified solution is called wort, which is called wort for short. The percentage of extract in wort to dry matter in raw material is called leaching rate. The extract is mainly composed of various fermentable sugars, non fermentable dextrin, protein, malt gum and minerals.
The purpose of saccharification is to create conditions conducive to the action of various enzymes, soak as many soluble substances in raw materials as possible, so as to obtain a higher leaching rate, make wort clear and transparent, scientific composition, provide good conditions for yeast fermentation, and require the equipment and technology as simple and reasonable as possible, and strive to shorten the production cycle and reduce production energy consumption.
