What is the Lundin distinction?
Longding differentiation, also known as protein differentiation, is a quantitative value to identify the protein decomposition of malt, which reflects the solubility of malt protein to a certain extent.
The measurement of Longding differentiation is that wort is prepared by "standard agreement saccharification method" and determined as follows.
① High molecular nitrogen (a zone) in wort was precipitated by tannin, and the sum of remaining middle molecular nitrogen (B zone) and low molecular nitrogen (C zone) was determined as soluble nitrogen.
② Molybdophosphoric acid was used to precipitate high molecular nitrogen and medium molecular nitrogen in wort, and the remaining soluble nitrogen was determined as low molecular nitrogen.
③ The content of total nitrogen in wort was determined.
According to the Longding differentiation method, the contents of a, B and C in total nitrogen were calculated through the above three determinations, and the protein was divided into three parts. Compared with malt, high molecular nitrogen (a region) is generally 20% ~ 2%, medium molecular nitrogen (b region) is generally 15% ~ 20%, and low molecular nitrogen (C region) is 55% ~ 60%.
