What kinds of beer modifiers are there?
In order to meet the needs of different consumer groups, beer in China has gradually developed from a single variety to multiple varieties. The basic principle, main raw materials and technological process of beer brewing are basically unchanged, but the measures adopted are ever-changing. A simple method is to adjust and modify the beer properly in the final stage of beer brewing. The additives used in beer modification are called modifiers. Many types of additives are commonly used in beer modifiers, such as color modifiers, nutritional functions (improving flavor) modifiers, stability (foam, flavor, non biological stability, etc.) modifiers 3 types.
(1)Color modifier In the past, there was only light beer in China, which was light yellow in color.In order to meet the needs of consumers for different seasons, different colors, and even different sensory appreciation, there are many kinds of color beer, such as brown beer, red beer, reddish brown beer, green beer, black beer and so on. In the past, malts of different colors were used to brew these beers, which were produced step by step from the ingredients. The process and parameters were difficult to control, especially to meet the color standard of the final product. At present, the color of these beers is mostly prepared by concentrated juice, without the use of burnt malt and black malt, which simplifies the production process.
① Concentrated juice of black and red beer. Black beer concentrated juice and red beer concentrated juice are made from black malt and burnt malt, hops and yeast, through saccharification, fermentation, filtration, vacuum concentration and other processes. According to the different amount of these colored malts, different color concentrated juice can be made.
The concentrated juice of black and red beer is actually produced according to the brewing process of dark beer, and finally concentrated. The beer made from this concentrated juice not only preserves the black and bright color of the traditional brewing beer, but also has the advantages of rich foam, fragrant flavor and malt flavor, and has the advantage of light beer with mild taste, moderate bitterness, and clean aftertaste.
② Pigment. The pigment has high chroma value, good light transmittance, suitable pH for beer acidity and low price. In order to reduce the cost, caramel pigment can be used to adjust the color of beer, but the quality of beer is not as good as beer adjusted with concentrated juice.
(2) Nutritional function modifier In order to improve the nutritional value or flavor of beer, the modifier added is called nutritional functional modifier.This type of modifier is mostly concentrated fruit juice or plant extract. It can be said that as long as people like to eat melons and fruits with nutritional value or certain functions, their juice can be pressed out by hydraulic pressure, and then added to beer after special treatment; some plant extracts can also be directly added to beer after treatment. Therefore, there are many kinds of commercial nutritional modifiers, such as spirulina extract, balsam pear juice, aloe juice, ginkgo extract, ginger juice concentrate, jujube extract, Wolfberry Extract, chrysanthemum extract, cactus extract, etc. breweries can choose according to their own actual situation.
(3) the flavor stability, Beer flavor stability, colloid stability and foam stability often rely on some additives (modifiers) to enhance. Generally, antioxidants are used to modify the flavor stability of beer, such as ascorbic acid, sulfite, bisulfite, enzymes (glucose oxidase) and phenolic compounds. Colloidal stability can be modified by adding silica gel, PVPP, Bao Dan Dan, enzyme and so on. Egg white hydrolysates, agar, alginic acid and their derivatives can enhance the foam stability of beer.
