How to adjust the grinding degree of malt according to different conditions in actual production?
In the actual production, the adjustment of comminution degree is more important, and how to choose the appropriate comminution degree, the basis is more complex. At present, most domestic breweries adopt the "one-time boiling saccharification method using auxiliary materials". In fact, the requirements for crushing degree are not very strict. However, due to the changes of malt quality, proportion of auxiliary materials, saccharification method, filtration method and other factors, the crushing degree of raw materials should be adjusted in time to ensure the smooth saccharification process. The specific requirements are as follows.
① In order to ensure the filtration speed of wort and reduce the leaching of harmful components in wheat husk, the wheat husk should be broken as far as possible. Therefore, the integrity of wheat husk should be checked first when checking the grinding degree. When the filtration is difficult, whether the wheat husk is too broken should also be regarded as a key inspection content.
② For the grinding degree of wheat grain content, when the malt dissolution is poor, the proportion of auxiliary materials is high, and the saccharification cycle is short, the grinding degree should be smaller, so as to facilitate the leaching and dissolution of materials, facilitate the role of enzymes, and improve the saccharification effect. On the contrary, it can be slightly coarse, but also pay attention to maintain a certain proportion of fine powder.
③ Different saccharification methods have different requirements for comminution degree. Generally, the grinding degree of leaching method is finer than that of boiling method, and the grinding degree of primary saccharification method is finer than that of secondary saccharification method. The grinding degree can be slightly coarser by using pre leaching or enzyme saccharification method.
④ When the filter tank is used to filter wort, because the wort layer needs to be used as the filter medium and the wort passes through the layer, the grinding degree should be coarse and the fine powder content should not be too high. When the plate and frame filter press is used, the wort is mainly filtered out by the external pressure, and the wheat husk as the filter layer is not particularly important, so it can be crushed more finely.
