What is the saccharification time of malt? What is the reason for the longer saccharification time?
Saccharification time is a value reflecting the activity of a-amylase in malt. When the malt saccharification solution is heated to 70 ℃, the temperature of the malt saccharification solution is higher than that of the malt saccharification solution,The time needed for reaction with iodine solution to change from blue to primary color of iodine solution. The shorter the saccharification time, the higher the activity of a-amylase in malt. The saccharification time of malt with good quality should be less than 10 minutes.
The reasons for longer saccharification time are as follows.
① The activity of raw barley embryo is weak and the germination rate is slow, which leads to the slow formation of malt a-amylase and the small amount, which makes the saccharification time long. Improper control of process conditions (such as low water temperature, low ventilation intensity, short mixing time and few times) will also result in less absolute amount of a-amylase and longer saccharification time.
② In the process of germination, the moisture content of wheat grains could not be maintained, which affected the adaptability of enzymes. Not only the endosperm dissolution was poor, but also the amount of various enzymes was low, resulting in a long saccharification time.
③ When the moisture content of malt is high, the baking temperature is high, which results in less enzyme content and restricted activity, passivation and longer saccharification time.
