The difference between coarse powder and fine powder is the difference of leaching rate between coarse powder and fine powder. The difference of malt quality is mainly determined by the difference of the ratio of surface area to volume of coarse malt powder and the ratio of surface area to volume of fine malt powder. The malt with small powder difference has good solubility and strong enzyme activity, so it is an ideal malt.
